½ cup Miracle Mix
2 eggs + 1 egg white
½ cup pumpkin puree
¼ cup light coconut milk
1 tsp. pure vanilla extract (alcohol based, no sugar added)
½- 1 tsp. cinnamon or pumpkin pie spice
½ tsp. gelatin or xanthan gum
1 Tbsp. Keto Sweet or 20 drops liquid stevia (optional for a sweeter waffle)
2 Tbsp. butter
1 ounce pecans, chopped
2 Tbsp. Lakanto Maple Flavored Syrup
1. Add all waffle ingredients to a medium bowl.
2. Whisk well to combine.
3. Ladle onto preheated waffle iron and cook according to manufacturer's instructions.
4. Top each serving with 1 Tbsp. butter, 1/2 oz. chopped pecans and 1 Tbsp. Lakanto Maple Flavored Syrup.
