What is the glycemic index / glycemic load of your cakes?
Many people are familiar with the “glycemic index” and where certain foods fall on this spectrum. But the “glycemic load” is a much better measure of the quantity and quality of carbohydrates in a food and how this food may affect your insulin response.
Based on our calculation, the GL per serving of our cakes is 9.67. Anything below 10 is considered “low.” For a cake that tastes as rich and decadent as ours, this may seem hard to belief. It is possible because many of the ingredients that we use have a glycemic load of ZERO. For example: Almonds (GL=0), Erythritol (GL=0), Organic Coconut Flour (GL=0), Inulin (GL=0), Stevia (GL=0), Cocoa (GL=5).
Are your products safe for people with diabetes?
YES! Wellness Bakeries is proud to produce grain-free and gluten-free baking mixes, made with natural, low-glycemic sweeteners (including erythritol, stevia, inulin and coconut sugar). Our products are MUCH lower in sugar and carbohydrates than traditional baking mixes.
This makes them suitable (in moderation) for those with diabetes and those who want to manage their weight and maintain healthy blood sugar levels. As always, check ingredients and nutrition labels and talk to your doctor if you have any questions about the foods that are right for you.
How should I store my baked goods?
For Cakes: If you are interesting in keeping the cake fresh after baking, keep refrigerated or frozen. Then allow them to reach room temperature or warm them slightly in the microwave (about 10 seconds) or a toaster oven (a few minutes) before eating.
For Cookies: Due to the amount of erythritol in our cookies, they may become dry if left out for a few days. This is because erythritol is not as “hygroscopic” – meaning that it does not retain moisture as well – as sugar. To prevent moisture loss, keep baked cookies covered tightly. Cookies can also be pleasantly softened with just 5-10 seconds in the microwave.
For Breads: Because our bread mixes are rich in fiber and tend to retain moisture, they are best kept loosely covered with ample air circulation (for example, a bread box… and not a zip top bag). This will prevent loaves from becoming “sticky” or moist. Keeping the bread refrigerated will also help retain freshness. Toasting to your preference may also improve the taste and texture.
For Pizzas, Muffins, Waffles and Pancakes: These foods do well stored in the refrigerator, loosely covered. They can also be wrapped airtight and stored in the freezer long term.
What is the shelf life of your products?
We have tested all of our products, unrefrigerated, for up to two years with no issues related to taste, aroma or baking quality.
We don’t use any preservatives in our products. However, that does not mean there are no preservatives inside. The antioxidants present in organic cocoa (found in our Chocolate Bliss Cake, Drinking Chocolate, Chocolate Frosting Starter and Better Brownies mixes) as well as the cinnamon (found in Carrot Cake, Spice Cake and Ginger Cookie mixes) function as powerful natural preservatives. Erythritol – the primary natural sweetener used in our products – also helps to extend shelf life.
If you plan to use our baking mixes (including Cookie, Cake, Bread, Pizza and Breakfast Mixes) within a few months, simply store them in a cool, dark place (cabinet or pantry). If you wish to store them for longer than six months, we recommend the fridge or freezer. This will not alter the finished product in any way.
Our other products do not contain oil-rich almonds, chia and flax. These products include Frosting Mixes, Drink Mixes and Ice Cream Mixes and all of our single-ingredient products, like Erythritol, Organic Coconut Palm Sugar, Chia, Dark Chocolate Chips, Organic Cocoa Powder and Organic Psyllium. These products are shelf stable for up to three years.
Most of your ingredients are organic. Why not almond flour?
We do our best to source the finest natural and organic ingredients in our products. Unfortunately, when it comes to almond flour, it is very difficult to find large quantities of an organic product. It is also more than double the cost. Considering that almonds are the first ingredient in many of our products, this would raise the cost of our cake and cookie mixes, for example, to $15-$18 per package.
But cost was not the only consideration, of course. You may be familiar with the Environmental Working Group. Every year, they issue a “Dirty Dozen” report, listing the fruits and vegetables which you should ALWAYS buy organic. These include (1) foods where pesticides, herbicides and fungicides are used in abundance and (2) where the soft, porous skin or leaf of the plant is actually consumed. Examples would include apples, peaches, tomatoes, spinach, kale and strawberries. These are foods you should always buy organic.
On the other hand, there are some conventional crops that need very little help in the way of chemical pesticides and herbicides. These crops may also include a thick, protective rind or shell that is NOT consumed. Examples would include avocados, pineapples, grapefruit and cantaloupe. You should still buy organic if possible, but conventional varieties of these foods are generally very safe.
In the case of almonds, few chemicals are used in their production. And furthermore, they have a hard shell that protects the nut inside. We believe that conventional almond flour is perfectly safe to consume, as one part of a widely varied and mostly organic diet.
Why do you use “non-dutched” organic cocoa powder?
Most commercially-available cocoa powders have been treated with alkalizing agents. This is also known as “Dutch-Processed” cocoa. It is used to change the color of cocoa and give it a smoother and milder taste. Unfortunately, these agents can leave behind a chemical residue.
What’s more, alkalization strips away the flavonoids found in natural cocoa. Flavonoids are powerful nutrients with antioxidant and anti-inflammatory properties. They help protect the heart and brain and support healthy blood pressure levels.
According to recent a study published in the Journal of Agricultural Food Chemistry, the Dutch process reduces the flavonoid content of cocoa anywhere from 65 to 90 percent! It’s no wonder that the antioxidant value (ORAC score) of alkalized cocoa has been shown to be less than HALF that of natural, non-dutched cocoa.
That’s why we ONLY use grade-A organic cocoa, grown at elevation in rich volcanic soils. Our cocoa is never Dutch-processed, so you can be sure that this ingredient is chemical free and retains its full nutritional power.
Are your products “approved” for people following the Paleo Diet?
We heard a quote recently about the paleo diet that helps to summarize our position on this popular subject. Paleo advocate, Andrew Badenoch says, “Paleo is a logical framework applied to modern humans. It is not an historical reenactment.”
You see, rather than dogmatically focusing on which foods are “allowed” or “not allowed” on a Paleo Diet, we believe it’s wiser to focus on the greater “logical framework.” And the most logical framework to follow is the macronutrient ratios (fats, proteins and carbohydrates) that our ancient ancestors likely consumed.
Most experts believe that our average Paleolithic ancestor consumed about 60 percent of his calories from fat, 20 percent from protein and another 20 percent from carbs (a 60-20-20 ratio). Of course, some populations (like the Inuits) consumed even more fats, while others consumed a higher percentage of carbohydrates (in the neighborhood of a 50-30-20 ratio).
By these measures, every product we sell could be considered “Paleo.” And that’s not all, because the specific ingredients we use are also those that were readily available to our ancestors. In fact, this even includes erythritol, which is naturally found in mushrooms, melons and other fruits.

Why do you use erythritol as your primary sweetener?
Erythritol is the perfect replacement for sugar. That’s because it looks like sugar. It tastes like sugar. And it bakes like sugar. Unlike sugar, however, erythritol has no calories and provides zero glycemic impact. That means it does not contribute to weight gain and won’t raise blood sugar or insulin levels.
Erythritol has been safely used in food products in Japan for more than 25 years. In 2001, it was approved by the FDA as GRAS (generally regarded as safe). Here at Wellness Bakeries, we have been using this ingredient in our products, our testing, and our own home for more than 10 years. Our results and feedback have been nothing but positive.
Based on voluminous research and testing, we have found erythritol to be superior in virtually every way to sugar and other high-calorie, high-glycemic sweeteners.
The best part is that this healthy substitute is found naturally in many foods, including mushrooms, watermelon, pears and grapes (as well as fermented foods like sake, wine and soy sauce). That means it is already well recognized by your body. In fact, it’s estimated that the average person consumes between 30 and 100 mg of naturally-occurring erythritol daily from our regular diets.
What’s more it does not promote tooth decay. In fact, it has even been shown to reduce plaque and the risk of dental cavities. It also has a very high digestive tolerance and does not cause gastrointestinal upset for the vast majority of people (unlike some sugar alcohols).

Are your products corn-free?
We use erythritol as the primary sweetener in our products. Erythritol is produced via fermentation process, from a substrate of non-GMO corn. The product is then crystalized to 99.5% purity. Many people who have an allergy or intolerance to corn, report no problems with erythritol. If you do have an allergy to corn, however, please consult your doctor before consuming erythritol.
Do you use artificial sweeteners?
We never have and never will use toxic chemical sweeteners in our products. Wellness Bakeries uses only naturally-occurring, low glycemic sweeteners. This usually includes a proprietary blend of erythritol, stevia, inulin and organic coconut palm sugar.
Are your mixes GMO free?
Yes, all of our products are GMO free. We do not use any ingredients that have been genetically modified.
Are your products free of gluten, soy and dairy?
Yes! All of Wellness Bakeries products are grain free and gluten free. We also do not use any soy or dairy products in any of our mixes. Some of the preparation instructions may include dairy products for you to add at home – like butter, cream or cream cheese. However, these ingredients are optional. Dairy-free alternatives are always provided.
Do your mixes contain allergens?
The ingredients and allergen information are clearly listed for all of our products on each individual product description page. Most of our products contain almonds – a tree nut – and should not be consumed by those with an allergy to nuts.
Are the nutrition facts for the mix only, or for the prepared products?
The nutrition facts panels on our packaging provide complete nutrition information for the mix itself… and for the prepared product as it will be served.

Can I use your Frosting Starter mixes to make dairy-free frostings?
Absolutely! Many of our customers like to use coconut milk or coconut cream, along with palm shortening or coconut oil to make dairy-free frostings. Be sure to download our free recipe book, Fantastic Frostings & Tasty Toppings, on our books page.
How do I accurately measure solid coconut oil?
Add the approximate amount of coconut oil to a small saucepan over low heat until melted. Pour the oil into a measuring cup.
Why do you recommend coconut oil for baking?
Coconut oil lends delicious flavor and moisture to baked goods. It also comes with a bevy of health benefits. It is rich in medium chain triglycerides (MCTs) which the body readily uses as fuel (instead of storing as body fat). And the lauric acid in coconut oil has immune boosting properties. Other healthy fats we recommend include avocado oil, organic ghee, macadamia nut oil and organic grass-fed butter.
Is there a substitute I can use for eggs?
Eggs are one of the most difficult things to replace in baking. Eggs provide binding and structure to baked goods. Without eggs, your baked items are going to be flatter than they would be otherwise. If you are sensitive to chicken eggs, you might ask your doctor about trying duck eggs. Duck eggs are a terrific substitute for chicken eggs if you can tolerate them, and they are bigger than most chicken eggs – so they naturally replace the “extra-large egg” we recommend in many of our recipes.
If you cannot tolerate duck eggs, the next preferred egg substitute is ground flax seeds mixed with hot water. This creates a flax seed gel that acts as a binder and a source of moisture in the place of eggs. For one extra-large egg, I recommend placing 1 Tbsp. of ground flax seeds in a measuring cup and add hot water until it reaches the ¼ cup line. Whisk the mixture a few times over the course of about 20 minutes to form a gel. Use this gel as you would eggs – you can even beat it with your mixer. If you are using this in a recipe that requires the ingredients to be cold, refrigerate before using.
If your recipe turns out flatter than you want it to be using the flaxseed-egg substitute, you can also a teaspoon of extra baking powder (not baking soda) to improve the rise. However, keep in mind that the resulting item will not be as fluffy as it would be with the use of egg.
How many packages of mix do I need to make a layer cake?
Each Wellness Bakeries healthy cake mix will make one standard 9-inch round cake or twelve cupcakes. If you’d like to make a layer cake, you will need one package of mix for each layer.
What is the baking time for mini cupcakes?
Mini cupcakes take from 8-12 minutes, depending on the pan. Begin checking the cupcakes at 8 minutes. Touch them lightly in the center. When they yield just slightly, they are done. Don’t over bake!
What kind of cupcake liners should I use?
Cupcake liners, like many paper products, contain chemicals, including bleaching agents, chemical dyes and quilon – a chemical which contains the heavy metal chrome. When these products are heated, they can leave trace elements in your baked goods.
For this reason, we recommend you use unbleached, non-toxic cupcake liners, such as those made by If You Care or Beyond Gourmet.
Does it make a difference if I use a glass or metal baking dish?
Yes!
Glass is an insulator. That means it takes longer to heat up. But once it does, it helps to maintain a stable temperature (even in an oven turns on and off intermittently). To compensate for the additional time it takes to heat up, you might need to extend cooking times for 5 or 10 minutes, when baking in glass.
Glass baking pans are best for cakes, which bake for a relatively long time at lower temperatures. Also keep in mind that glass can shatter if the temperature changes too quickly (like when you transfer from the oven to the counter). So be careful!
Metal pans heat up and cool down quickly. That means they are great for items baked at a high temperature for a short time. The type of metal you use can also make a difference. Metal with a dull finish absorbs heat faster than shiny metal, so that cookies baked on a dull cookie sheet might get too dark on the bottom before they are cooked on top.
At Wellness Bakeries we recommend that you use safe, nonstick metal pans like those made from stainless steel, stoneware or cast iron – NOT traditional non-stick pans that contain perflourates (PFOA) which are known endocrine disruptors.

Do I need to make any altitude adjustments to make your goodies?
We have tested our products extensively at sea level (at our founding headquarters in Delray Beach, Florida) as well as our new headquarters, mile high in the Wasatch Mountains of Utah. There is no noticeable difference in the results. So, unless you live in the rare air of a high alpine environment, your best bet is to just follow the instructions on the package.

The cost to ship to most countries varies from $40 to $75US depending on the size of your order and the distance. We do not add anything to these prices for “handling” or filling out customs paperwork. In fact, the price we charge is less than our actual shipping cost.

This will prevent loaves from becoming “sticky” or moist. Keeping the bread refrigerated will also help retain freshness. Toasting to your preference may also improve the taste and texture.
For Pizzas, Muffins, Waffles and Pancakes: These foods do well stored in the refrigerator, loosely covered. They can also be wrapped airtight and stored in the freezer long term.
What is the shelf life of your products?
We have tested all of our products, unrefrigerated, for up to two years with no issues related to taste, aroma or baking quality.
We don’t use any preservatives in our products. However, that does not mean there are no preservatives inside. The antioxidants present in organic cocoa (found in our Chocolate Bliss Cake, Drinking Chocolate, Chocolate Frosting Starter and Better Brownies mixes) as well as the cinnamon (found in Carrot Cake, Spice Cake and Ginger Cookie mixes) function as powerful natural preservatives. Erythritol – the primary natural sweetener used in our products – also helps to extend shelf life.
If you plan to use our baking mixes (including Cookie, Cake, Bread, Pizza and Breakfast Mixes) within a few months, simply store them in a cool, dark place (cabinet or pantry). If you wish to store them for longer than six months, we recommend the fridge or freezer. This will not alter the finished product in any way.
Our other products do not contain oil-rich almonds, chia and flax. These products include Frosting Mixes, Drink Mixes and Ice Cream Mixes and all of our single-ingredient products, like Erythritol, Organic Coconut Palm Sugar, Chia, Dark Chocolate Chips, Organic Cocoa Powder and Organic Psyllium. These products are shelf stable for up to three years.
Most of your ingredients are organic. Why not almond flour?
We do our best to source the finest natural and organic ingredients in our products. Unfortunately, when it comes to almond flour, it is very difficult to find large quantities of an organic product. It is also more than double the cost. Considering that almonds are the first ingredient in many of our products, this would raise the cost of our cake and cookie mixes, for example, to $15-$18 per package.
But cost was not the only consideration, of course. You may be familiar with the Environmental Working Group. Every year, they issue a “Dirty Dozen” report, listing the fruits and vegetables which you should ALWAYS buy organic. These include (1) foods where pesticides, herbicides and fungicides are used in abundance and (2) where the soft, porous skin or leaf of the plant is actually consumed. Examples would include apples, peaches, tomatoes, spinach, kale and strawberries. These are foods you should always buy organic.
On the other hand, there are some conventional crops that need very little help in the way of chemical pesticides and herbicides. These crops may also include a thick, protective rind or shell that is NOT consumed. Examples would include avocados, pineapples, grapefruit and cantaloupe. You should still buy organic if possible, but conventional varieties of these foods are generally very safe.
In the case of almonds, few chemicals are used in their production. And furthermore, they have a hard shell that protects the nut inside. We believe that conventional almond flour is perfectly safe to consume, as one part of a widely varied and mostly organic diet.
Why do you use “non-dutched” organic cocoa powder?
Most commercially-available cocoa powders have been treated with alkalizing agents. This is also known as “Dutch-Processed” cocoa. It is used to change the color of cocoa and give it a smoother and milder taste. Unfortunately, these agents can leave behind a chemical residue.
What’s more, alkalization strips away the flavonoids found in natural cocoa. Flavonoids are powerful nutrients with antioxidant and anti-inflammatory properties. They help protect the heart and brain and support healthy blood pressure levels.
According to recent a study published in the Journal of Agricultural Food Chemistry, the Dutch process reduces the flavonoid content of cocoa anywhere from 65 to 90 percent! It’s no wonder that the antioxidant value (ORAC score) of alkalized cocoa has been shown to be less than HALF that of natural, non-dutched cocoa.
That’s why we ONLY use grade-A organic cocoa, grown at elevation in rich volcanic soils. Our cocoa is never Dutch-processed, so you can be sure that this ingredient is chemical free and retains its full nutritional power.
Are your products “approved” for people following the Paleo Diet?
We heard a quote recently about the paleo diet that helps to summarize our position on this popular subject. Paleo advocate, Andrew Badenoch says, “Paleo is a logical framework applied to modern humans. It is not an historical reenactment.”
You see, rather than dogmatically focusing on which foods are “allowed” or “not allowed” on a Paleo Diet, we believe it’s wiser to focus on the greater “logical framework.” And the most logical framework to follow is the macronutrient ratios (fats, proteins and carbohydrates) that our ancient ancestors likely consumed.
Most experts believe that our average Paleolithic ancestor consumed about 60 percent of his calories from fat, 20 percent from protein and another 20 percent from carbs (a 60-20-20 ratio). Of course, some populations (like the Inuits) consumed even more fats, while others consumed a higher percentage of carbohydrates (in the neighborhood of a 50-30-20 ratio).
By these measures, every product we sell could be considered “Paleo.” And that’s not all, because the specific ingredients we use are also those that were readily available to our ancestors. In fact, this even includes erythritol, which is naturally found in mushrooms, melons and other fruits.

Why do you use erythritol as your primary sweetener?
Erythritol is the perfect replacement for sugar. That’s because it looks like sugar. It tastes like sugar. And it bakes like sugar. Unlike sugar, however, erythritol has no calories and provides zero glycemic impact. That means it does not contribute to weight gain and won’t raise blood sugar or insulin levels.
Erythritol has been safely used in food products in Japan for more than 25 years. In 2001, it was approved by the FDA as GRAS (generally regarded as safe). Here at Wellness Bakeries, we have been using this ingredient in our products, our testing, and our own home for more than 10 years. Our results and feedback have been nothing but positive.
Based on voluminous research and testing, we have found erythritol to be superior in virtually every way to sugar and other high-calorie, high-glycemic sweeteners.
The best part is that this healthy substitute is found naturally in many foods, including mushrooms, watermelon, pears and grapes (as well as fermented foods like sake, wine and soy sauce). That means it is already well recognized by your body. In fact, it’s estimated that the average person consumes between 30 and 100 mg of naturally-occurring erythritol daily from our regular diets.
What’s more it does not promote tooth decay. In fact, it has even been shown to reduce plaque and the risk of dental cavities. It also has a very high digestive tolerance and does not cause gastrointestinal upset for the vast majority of people (unlike some sugar alcohols).

Are your products corn-free?
We use erythritol as the primary sweetener in our products. Erythritol is produced via fermentation process, from a substrate of non-GMO corn. The product is then crystalized to 99.5% purity. Many people who have an allergy or intolerance to corn, report no problems with erythritol. If you do have an allergy to corn, however, please consult your doctor before consuming erythritol.
Do you use artificial sweeteners?
We never have and never will use toxic chemical sweeteners in our products. Wellness Bakeries uses only naturally-occurring, low glycemic sweeteners. This usually includes a proprietary blend of erythritol, stevia, inulin and organic coconut palm sugar.
Are your mixes GMO free?
Yes, all of our products are GMO free. We do not use any ingredients that have been genetically modified.
Are your products free of gluten, soy and dairy?
Yes! All of Wellness Bakeries products are grain free and gluten free. We also do not use any soy or dairy products in any of our mixes. Some of the preparation instructions may include dairy products for you to add at home – like butter, cream or cream cheese. However, these ingredients are optional. Dairy-free alternatives are always provided.
Do your mixes contain allergens?
The ingredients and allergen information are clearly listed for all of our products on each individual product description page. Most of our products contain almonds – a tree nut – and should not be consumed by those with an allergy to nuts.
Are the nutrition facts for the mix only, or for the prepared products?
The nutrition facts panels on our packaging provide complete nutrition information for the mix itself… and for the prepared product as it will be served.
