Ingredients
1 ½ cups Miracle Mix
4 large pastured eggs, room temp.
½ cup organic whole sour cream
6 ounces organic cheddar cheese, shredded
2 whole organic jalapeno peppers
Instructions
1. Preheat oven to 350 F. Line a muffin pan with unbleached parchment paper liners. Shred the cheese. Slice and seed the jalapenos. Dice all but 10 rings of the peppers.
2. In a medium mixing bowl, add the eggs and sour cream. Using a hand mixer, blend on medium speed to thoroughly combine.
3. Add the Miracle Mix and blend on medium speed for 1 minute to incorporate. You will have a thick batter.
4. Add the shredded cheese and diced jalapenos.
5. Divide batter between muffin cups. Top with reserved jalapeno rings.
6. Transfer to preheated oven and bake 20-22 minutes or until a toothpick inserted in the center comes out clean.
7. Let cool in the pan for 5 minutes. Then transfer muffins to a wire rack to continue cooling.
