And while pies – in any form – tend to evoke feelings of comfort and warmth, they also typically come with post-meal feelings of sluggishness, not to mention long-term health consequences.
Here at Wellness Bakeries, it’s our mission to bring all of your favorite comfort foods back to the table in grain-free, carb-conscious fashion.
But to recreate the delicate, flaky, buttery crust of an all-American pie? This would be no easy baking feat!
You see, the best pies have a very “short” crust. And no, it is not the opposite of “tall” when used in this context. In baking terminology, it means that there is a high proportion of fat to flour.
Typically, short doughs are exceptionally rich, crumbly, flaky and meltingly tender.
They tend to be crisp rather than chewy. If you can conjure the texture of shortbread – that’s“short” dough – it’s even baked right into the name!
But here’s the chemistry quandary...
Shortness is born quite simply from the alchemy of gluten (typically from refined white flour) and butter (or shortening).
In traditional pie dough, flour coats pockets of pure fat. This is what happens when you “cut in” cold butter in the first step of making a grain-based pie crust. Then, when water is added, the wheat flour is moistened and sheets of gluten form, creating that flaky, irresistible, layered texture we all know and love.
However, in carb-conscious Paleo baking, we’re missing the gluten part of the equation.
Using a small amount of cream cheese (dairy-free Kite Hill cream cheese works like a charm!) plus a minute amount of a gum (like xanthan, guar or glucomannan), we can come pretty darn close to replicating the reaction… and producing a light and tender, buttery and flaky pie crust… without the use of pesky gluten.
Other starring players in a great crust include eggs (which make the dough pliable, and add a protein matrix for strength) and vinegar (an acid that tenderizes the dough).
Our pie crust had to be buttery and short… and it had to be sturdy enough to be a “handheld”. Check, check! (see above sturdiness test)
Now for the filling…
It’s hard to beat the taste of cinnamon baked apples.
With their spicy-sweet flavor and tender texture, enjoying a freshly-baked apple pie is like a warm slice of cozy comfort.
While the humble apple has some potentially redeeming qualities (rich in antioxidant polyphenols and fiber), they are quite high in sugar, and especially high in a particular concerning form of sugar, fructose.
Fructose, as its name suggest, is sugar from fruit.
For years health proponents claimed that fructose was the “healthier” form of sugar thanks to its low glycemic properties.
While is true that fructose has little impact on blood sugar and insulin levels, it has profound impact on cholesterol, liver health, hunger... and even the speed at which you age!
In fact, research shows that despite its low glycemic nature, fructose is actually the most dangerous form of sugar. Fructose has been found to:
• Raise ghrelin levels – a hormone that boosts appetite
• Tax the liver and contribute to fatty liver disease
• Increase uric acid levels – raising blood pressure and impairing kidney function
• Increase triglyceride and oxidized LDL levels – key factors in heart disease
• Damage neurons, contributing to memory loss and cognitive decline
• Promote glycation (the binding of sugar to proteins) which causes both inflammation and oxidation –key factors in every chronic disease
• Of course, when you cook apples with additional sugar – the traditional way to create the filling of an apple pie - the sugar (and carb) content increases significantly.
Turning to one of our favorite versatile veggies, the zucchini, we recreated the tender-textured, sweet-cinnamon filling of a classic apple pie. (Chayote squash is another “apple impersonator” you could use in this recipe with great results. Just keep in mind, it will take longer to soften during the sauté and simmer phase.)
Now you might be wondering: How does it taste?
Just like apple pie!
Sometimes, to ensure I get an authentic reaction, I won’t tell my number one taste tester when I make a sneaky substitution, like zucchini impersonating apples in this recipe. After scarfing down the first Keto Apple Hand Pie, ooh-ing and ahh-ing the whole time, he requested a second.
I said: “Looks like you like zucchini pies, hmmm?”
You should have seen his face…
ZUCCHINI???!!!
(For the record, he’s an excellent eater, but does not particularly care for zucchini. I knew with his reaction I’d found a winner!)
Ok, enough talk... let's get to baking.

You’ll find the printable recipe at the bottom of this post, but for now, let’s walk through it.
Using our versatile Miracle Mix, eggs, butter (or palm shortening), apple cider vinegar, cream cheese (or Kite Hill cream cheese!), organic zucchini, cinnamon, vanilla extract, and some Keto Sweet you can whip up these delicious, All-American mini pies … with just 30 minutes of active time in the kitchen!
You'll also need a food processor, a small bowl, a baking sheet and unbleached parchment paper, a rolling pin (or a tall drinking glass!), a cookie cutter, a skillet, a pastry brush and some cellophane.
Preheat the oven to 375 F. Place the chilled dough between two pieces of parchment and roll out to 1/4 inch thickness.
Use a 3" cookie cutter to cut out circles. If the dough gets too soft and hard to work with, just pop it into the freezer for a couple minutes.

Ingredients
Crust
1 ¼ cups Miracle Mix
½ tsp. xanthan gum or glucomannan
¼ tsp. sea salt
7 Tbsp. grass-fed butter
2 oz. whole organic cream cheese (or Kite Hill cream cheese)
1 large pastured egg
15 drops stevia (to taste)
½ Tbsp. organic apple cider vinegar
Filling
2 medium organic zucchini
1 Tbsp. cinnamon
1/4 tsp. fresh nutmeg
4 Tbsp. grass-fed butter
3 Tbsp. lemon juice
8 Tbsp. Keto Sweet
Egg Wash
1 large pastured egg yolk
2 tsp. water
Instructions
1. Make the crust. Add the Miracle Mix, xanthan gum, and sea salt to a food processor. Pulse to combine.
2. Add the 7 Tbsp. cold butter and cream cheese. Pulse for 3 seconds. Add one egg, stevia and vinegar and pulse just until it forms a dough ball (do not over-process).
3. Place dough on a piece of cling wrap and wrap tightly. Refrigerate.
4. While the dough sets, make the cinnamon-apple filling. Peel the zucchini, cut into quarters legthwise and de-seed. Dice zucchini into 1/2 inch pieces.
5. In a safe skillet, add 4 Tbsp. butter. Add the diced zucchini, remaining Keto Sweet, cinnamon, nutmeg and lemon juice. Simmer for 15 minutes or until tender.
6. reheat oven to 375 F. Remove dough from refrigerator. Place dough between two pieces of greased parchment paper and roll out to roughly 1/4 inch thickness. Use a cookie cutter to cut out 16 circles. If dough becomes too soft and difficult to work with, transfer the baking sheet to the freezer for a few minutes.
7. Place half of the dough rounds on a large, greased baking sheet. Scoop approximately 2 Tbsp. of dough onto each circle. Top with another dough round and use a fork to go around the outer rim, pressing to seal.
8. Make the egg wash by combining egg yolk with 2 tsp. water. Brush the outside of the hand pies with egg wash, sprinkle with additional Keto Sweet and transfer to the oven.
9. Bake 15-17 minutes to golden.
10. Let cool on the pan for 10 minutes to set, then serve.

Perfectly Sweet: Adjust sweetness to your preference. Feel free to add stevia to theberries as well as in the dough. Remember, sweetness is personal!
Dairy-Free: While butter gives the best flavor, palm shortening can be used with similar results. Similarly, Kite Hill cream cheese can be used in lieu of traditional cream cheese. (Note: We have not tried this recipe with homemade cashew cream cheese; only Kite Hill ).
Structural Limits: While we are able to improve structure, a low-carb, grain-free galette will not have the same sturdiness of a gluten-and-carb filled variety. Because of this, we recommend keeping the parchment under the galette to slice and serve, to prevent breakage.

Wellness Bakeries was founded in 2006, with the mission to create the world’s healthiest and best-tasting gluten-free, carb-conscious, baking mixes.

When we started this journey, there were no options for truly healthy baking mixes.

So, with our backgrounds in health research, nutritional biochemistry and recipe development, we set out to use grain-free flours, healthy, slimming fats and natural no-sugar sweeteners to match the taste, texture and flavor of our favorite comfort foods.
At the time, very few people had even heard the term “gluten free.” There were no products to taste for inspiration and no recipe books to follow. It was all trial… and LOTS of errors.
Eventually, however, the experiments paid off. We discovered a few secrets. And then we made small, incremental improvements… perfecting one delicious product at a time.
