1 cup Miracle Mix
5 egg whites (⅔ cup liquid egg whites)
2 Tbsp. ground golden flax (or ground white chia)
2 Tbsp. butter, cut into pea sized pieces, and chilled in freezer
1 tsp. grain-free baking powder
1. In a medium bowl, whisk the Miracle Mix, flax and grain-free baking powder.
2. Place the chopped butter into the freezer.
3. Add cold butter to flour ingredients. Mix with hands or pastry blender to coarse sand consistency.
4. Transfer mixture to the freezer.
5. Preheat oven to 425, prepare a cast iron griddle or cookie sheet. A parchment lined pan will work too, but cast iron gives best texture
6. Whip egg whites to stiff peaks.
6. Fold whipped whites into flour mixture to form a thick batter.
6. Scoop by 2 Tbsp. onto prepared pan, shaping gently.
6. Bake for 16-18 min to golden.
