As legend has it, the baguette was born when Napoleon requested loaves be formed into long baton shapes to make it easy for his soldiers to carry while in the battlefield.
Five hundred years later, you’ll still find this classic French bread - in its elongated shape - at any of the 26,000+ boulangeries in France.
Whether adorned simply with farm fresh butter or served as Jambon-beurre – a baguette sandwich filled with ham and butter – the classic French loaf lends itself to a variety of cuisines and culinary uses.
In fact, the famous bread is so versatile, it can easily star in savory and sweet dishes, alike.
Whether serving as a make-shift pizza crust in the childhood (or college!) classic French Bread Pizza… as a base for gooey English Bread Pudding… the supportive star for the Gruyere-crowned French Onion Soup… the base for True French Toast and Crostini… or as a simple vehicle to scoop up creamy dips and sop up hearty stews, it’s no wonder this bread is so popular the world over!
To be considered a true French baguette, the loaf must be 55 to 65 centimeters, weigh between 250 to 300 grams, and contain 18 grams of salt per kilogram of flour.
What’s more, per the '"baguette de tradition française"', this special loaf should be made almost exclusively with water, flour, yeast, and salt.
Of course, while using traditional ingredients yields a delicious, crusty loaf, a baguette is comprised almost entirely of gluten and carbohydrates.
And you know what that means: Bloods sugar spikes… weight gain… inflammation… more rapid aging… and much, much more!
Using our Miracle Bread Mix, we set out to create a delicious baguette that was very low in carbs, grain-free and rich in healthy fats. But to call it “a success”, our baguette had to be able to stand up to all of the classic French bread preparations.

While the vast majority of the recipes here at Wellness Bakeries don't call for a yeast preparation, we LOVE the authentic taste and additional rise active yeast can impart.
When choosing yeast, look for non-GMO active dry yeast. You'll need some warm water - between 100 F and 105 F (a kitchen thermometer is indispensable here), and something to feed the yeast.

Real Food Ingredients… Nothing Artificial!
MIRACLE BREAD INGREDIENTS: Blanched Almond Flour, Organic Flax Seed Meal, Almond Flour, Organic Psyllium Husk Powder, Cream of Tartar, Sea Salt, Baking Soda.
ALLERGEN STATEMENT: This product contains Almond.
You’ll find the printable recipe at the bottom of this post, but for now, let’s walk through it.
For this recipe, you’ll need a deep metal bowl, a hand mixer, a silicone spatula, measuring cups, a small ladle and a safe Belgian waffle iron .
You’ll also need 2 cups Miracle Mix, 8 pastured eggs, 2 Tbsp. melted butter or coconut oil, 8 ounces cream cheese (or healthy dairy-free cream cheese alternative like Kite Hill) and 2 tsp. vanilla extract.
Heat water to 100-105 F.
(NOTE: You can skip this step and proceed to Step 4 if you are not using the yeast preparation.)
Blend on medium speed for 1 minute to thoroughly incorporate ingredients. Let stand 5 minutes to fully absorb the liquid.
Divide dough in half and using wet hands scoop batter onto prepared baguette pan, gently smoothing into a baton shape. Brush with egg wash and use a serrated knife or lame to make 3-4 diagonal slashes across the top.
Bake in preheated oven for 25-30 minutes. The exterior should be golden and crusty like the photo above. (Don't forget the egg wash!)

Ingredients
½ cup filtered water
2 tsp. active dry yeast
2 tsp. inulin, maple syrup or honey*
3 large pastured eggs
¼ cup grass-fed butter or coconut oil, melted
¼ cup organic yogurt, sour cream or coconut cream
1 Tbsp. organic apple cider vinegar
Instructions
1. Line the bottom of a French bread pan with unbleached parchment paper. Add the yeast and 2 tsp. sweetener* to a large bowl. Heat water to 105°F - 110°F (41°C - 43°C) and pour over yeast. Cover with a kitchen towel to bloom for 7 minutes.
2. In another bowl, whisk the eggs, vinegar, sour cream and melted butter.
3. Add the wet ingredients into the yeast mixture. Using a hand held mixer, beat to combine.
4. Pour in the Miracle Bread Mix and beat on medium speed to fully combine. Let stand 5 minutes to absorb liquid.
5. Divide loose dough in half to make two baguettes. Using wet hands, scoop batter onto prepared pan and shape, gently smoothing the surface. For a shiny, golden crust, gently brush with egg wash. Then using a serrated knife or lame cut 3-4 diagonal slashes across the top.
6. Cover with a kitchen towel and place in a draft-free area to rise for 50 minutes. Your bread will rise roughly 1-2 inches. While your bread is rising, preheat oven to 350°F (177°C). Transfer risen bread to oven and bake 25-35 minutes or to internal temperature of 205°F (96°C). (To prevent over-browning, cover loosely with aluminum foil in the last 15 minutes)
7. Let baked bread cool completely before slicing. [* NOTE: Sweetener is used to feed the yeast. Once yeast blooms, no sweetener remains.]

So, with our backgrounds in health research, nutritional biochemistry and recipe development, we set out to use grain-free flours, healthy, slimming fats and natural no-sugar sweeteners to match the taste, texture and flavor of our favorite comfort foods.
At the time, very few people had even heard the term “gluten free.” There were no products to taste for inspiration and no recipe books to follow. It was all trial… and LOTS of errors.
Eventually, however, the experiments paid off. We discovered a few secrets. And then we made small, incremental improvements… perfecting one delicious product at a time.
And while it certainly wasn’t easy…
