1 Miracle Bread Mix
½ cup filtered water (120 ml)
2 tsp. yeast (6 g)
2 tsp. inulin, maple syrup or honey (10 ml)*
3 large pastured eggs (150 g)
¼ cup grass-fed butter or coconut oil, melted (56 g)
¼ cup organic yogurt, sour cream or coconut cream (60 g)
1 Tbsp. organic apple cider vinegar (15 ml)
Egg Wash Ingredients
4 large pastured eggs (200 g)
3 Tbsp. organic heavy cream
½ tsp. cinnamon
1 tsp. vanilla extract
Oil for Frying
4 Tbsp. coconut oil
1. Make Miracle Bread according to package instructions for loaf preparation.
2. Let baked bread cool in the pan on a wire rack for 30 minutes. Then remove from pan and cool completely on wire rack before slicing.
3. In a shallow dish, whisk together the remaining eggs with the cream, cinnamon and vanilla.
4. Add one tablespoon coconut oil to a large, safe non-stick skillet over medium heat.
5. Dip four slices of bread into the egg mixture, coating well on both sides.
6. Place coated slices in pan and cook until golden; then flip.
7. Do not crowd pan. Repeat with remaining slices.
