Ahh, garlic bread. That butter-drenched loaf, topped with loads of fresh-pressed garlic, butter, just-picked parsley and aged cheese. With such an assortment of crave-worthy flavors, it’s no wonder this bread has become a staple in Italian-American cuisine.
Allegedly originating from the classic and ancient Bruscetta- a crusty bread topped with a marinated tomato topping - garlic bread, like many recipes, was apparently a "happy accident".
Legend has it that when tomatoes and olive oil were scarce in Little Italy, Italian immigrants substituted garlic, butter and herbs in their old-world Bruscetta recipe.
And, as they say... the rest is history.
Before we talk about the bread, let’s talk about its vitally important culinary companion in this recipe: Garlic!
Few ingredients have such deep-rooted and world-wide history in cuisine as the “stinking rose”.
From the wildly popular garlic-and-herb Chimichurri… to Chicken with 40 Cloves of Garlic… to Mussels with White Wine and Garlic… to Garlic Shrimp – and practically everything Italian – garlic is a culinary boon with a myriad of medicinal benefits.
In fact, much of the culinary allure (and health benefits!)of garlic come from its shape-shifting ability to form a variety of different compounds - each with unique flavors and biological activities.
Boasting more than 100 sulfur compounds, the unmistakable smell and flavor of garlic is due to a phytonutrient called allicin. This sulfur-containing compound is only formed in garlic when it is crushed.
You see, when we break the cell walls of the “stinking rose”, we cause an enzyme called allinase to combine with alliin. This creates a compound called allicin, which is the trademark scent of garlic.
But garlic’s shape-shifting doesn’t end there. Three allicin molecules combine to form another powerful compound called ajoene, which then morphs into many other delicious and health-promoting compounds.
Since the days of Hippocrates, this medicinal bulb has been used medicinally to treat everything from the common cold to athlete’s foot.Not only is garlic a powerful, broad spectrum anti-fungal and anti-bacterial agent, it also:
Because allicin is destroyed by heat, the greatest health benefits of garlic come from eating it fresh. And for maximum benefit, crush or press the cloves, and allow the garlic to stand for 5 to 10 minutes. This allows the health-promoting bioactive compounds to fully form – providing you with garlic’s maximum benefit.
So now that you know about garlic’s “superfood” status, you might suspect that the redeeming ingredients in garlic bread… don’t include the bread!
Like most Italian comfort foods, traditional garlic bread is well-known for its reliance on wheat flour – an ingredient that spikes your blood sugar faster than drinking an icy cola!
Not to mention the issues with today’s strains of wheat. In fact, today’s wheat - thanks to selective breeding and genetic manipulation -contains much high levels of gluten than those in old-world strains. Real Food Ingredients… Nothing Artificial!
MIRACLE BREAD INGREDIENTS: Blanched Almond Flour, Organic Flax Seed Meal, Almond Flour, Organic Psyllium Husk Powder, Cream of Tartar, Sea Salt, Baking Soda.
ALLERGEN STATEMENT: This product contains Almond.
You’ll find the printable recipe at the bottom of this post, but for now, let’s walk through it.
Heat water to 100-105 F.
(NOTE: You can skip this step and proceed to Step 4 if you are not using the yeast preparation.)
Blend on medium speed for 1 minute to thoroughly incorporate ingredients. Let stand 5 minutes to fully absorb the liquid.
Divide dough in half and using wet hands scoop batter onto prepared baguette pan, gently smoothing into a baton shape. Brush with egg wash and use a serrated knife or lame to make 3-4 diagonal slashes across the top.
Shape: Customarily beginning as a baguette, garlic bread is usually made by either splitting the loaves in half (as we've done here) or slicing into rounds. The bread gets toasted and then topped generously with a garlic mixture before being baked to let the flavors meld.
Servings: The recipe below demonstrates how you can make garlic bread from an entire batch of Miracle Bread. But you can easily make this recipe from a portion of your pre-baked Miracle Bread to serve your family’s needs.
Dairy Free: Use coconut yogurt or cream and coconut oil in the dough; use olive oil or a combination of olive oil and palm shortening in the garlic topping. Omit the Parmesan or use Homemade Paleo Parmesan (find the recipe in our free guide, Paleo Cheeses).

Ingredients
Bread
½ cup filtered water (120 ml)
2 tsp. active dry yeast (6 g)
2 tsp. inulin, maple syrup or honey (10 ml)*
3 large pastured eggs (150 g)
¼ cup grass-fed butter or coconut oil, melted (56 g)
¼ cup organic yogurt, sour cream or coconut cream (60 g)
1 Tbsp. organic apple cider vinegar (15 ml)
Topping
¼ cup grass-fed butter, melted
2 Tbsp. extra virgin olive oil
6 cloves garlic, minced
3 Tbsp. grated Parmesan cheese
2 Tbsp. chopped parsley
Instructions
1. Line the bottom of a French bread pan with unbleached parchment paper. Add the yeast and 2 tsp. sweetener* to a large bowl. Heat water to 105°F - 110°F (41°C - 43°C) and pour over yeast. Cover with a kitchen towel to bloom for 7 minutes.
2. In another bowl, whisk the eggs, vinegar, sour cream and melted butter.
3. Add the wet ingredients into the yeast mixture. Using a hand held mixer, beat to combine.
4. Pour in the Miracle Bread Mix and beat on medium speed to fully combine. Let stand 5 minutes to absorb liquid.
5. Divide loose dough in half to make two baguettes. Using wet hands, scoop batter onto prepared pan and shape, gently smoothing the surface. For a shiny, golden crust, gently brush with egg wash. Then using a serrated knife or lame cut 3-4 diagonal slashes across the top.
6. Cover with a kitchen towel and place in a draft-free area to rise for 50 minutes. Your bread will rise roughly 1-2 inches. While your bread is rising, preheat oven to 350°F (177°C). Transfer risen bread to oven and bake 25-35 minutes or to internal temperature of 205°F (96°C). (To prevent over-browning, cover loosely with aluminum foil in the last 15 minutes)
7. Let baked bread cool completely before slicing.
8. Cut loaves in half lengthwise. Crush garlic cloves. Grate Parmesan. Chop parsley.
9. In a small bowl, combine remaining butter, olive oil and garlic.
10. Toast cut loaves to golden. Spread the butter-garlic-oil mixture evenly over the toasted baguettes. Top with Parmesan and parsley.
11. Return to oven and broil for 30 seconds - 1 minute to melt cheese.
12. Serve immediately.
[* NOTE: Sweetener is used to feed the yeast. Once yeast blooms, no sweetener remains.]

At the time, very few people had even heard the term “gluten free.” There were no products to taste for inspiration and no recipe books to follow. It was all trial… and LOTS of errors.
Eventually, however, the experiments paid off. We discovered a few secrets. And then we made small, incremental improvements… perfecting one delicious product at a time.
