Yield: Two 6” pita breads (four pockets)
⅓ cup Miracle Mix
¼ cup warm water
1 large pastured egg
1 Tbsp. extra virgin olive oil
½ tsp. xanthan gum or konjac fiber (optional)
1. Preheat oven to 350°F. Prepare a baking sheet with unbleached parchment paper.
2. In a medium bowl, add all ingredients. Whisk to form a thick batter.
3. Use a ladle to scoop ¼ cupfuls of batter onto parchment-lined baking sheet in circles.
4. Transfer to the oven and bake 17-19 minutes.
5. Cool on a wire rack, then cut each circle in half. Slice a slit to make a pocket, if desired.
6. Store in an airtight container.
