1 ½ cup Miracle Mix
½ cup grass-fed butter (or organic palm shortening)
4 large pastured eggs
1 cup organic full-fat sour cream (or coconut yogurt)
2 ounces organic whole cream cheese (or Kite Hill cream cheese)
½ cup Keto Sweet
1 whole lemon, juice and zest
1 tsp. non-aluminum baking powder
1. Preheat oven to 350 F. Grease a 9" loaf pan and line with parchment for easy removal.
2. In a medium bowl, add the melted butter, eggs, sour cream, cream cheese, lemon extract and zest.
3. Beat on medium speed to combine.
4. Add the Miracle Mix, Keto Sweet and baking powder and mix again until smooth.
5. Scrape batter into prepared pan and transfer to preheated oven.
6. Bake 35-45 minutes until golden and a toothpick comes out clean.
7. Let cool on a wire rack in the pan for 10 minutes; remove pound cake from pan and finish cooling on wire rack.
8. Serve with fresh whipped cream, fresh organic raspberries and additional lemon zest.
