Growing up, my grandmother always seemed to have a batch of warm, pecan sticky buns ready to enjoy.
With their sweet, soft dough, super-sticky caramel sauce and crisp pecans, these rolls were baked in a covered aluminum tin to allow the sugary topping to imbue the dough with its cinnamon-sweet goodness.
Once they emerged from the oven, tempted tasters would pull off a decadent (and uber messy!) roll from the batch, typically bringing part of another with it (sometimes inciting sibling rifts!).
While many of us think of sticky buns as an American treat,they have actually been consumed since the Middle Ages, when cinnamon became a more prominent ingredient in local cuisine.
But it wasn’t until the 18th century that these famous sweet rolls made their way to the States. In fact, we can thank the Pennsylvania Dutch for introducing “Schnecken” – meaning snails, for their spiral shape,to the US.
Enjoyed as a Saturday morning treat in the homes of German and Jewish immigrants in the early 20th century, schnecken is often confused with rugelach.
These classic pastries differ slightly in their ingredients and preparation. Schnecken dough made with sour cream, rugelach is made with cream cheese; Schnecken are rolled into a cylinder and sliced to create a spiral shape; rugelach are formed from triangles and rolled into a croissant shape.
Now that you know a bit of the history of these delectable treats, let’s talk about what they contain…
A traditional sticky bun – whether freshly baked from alocal bakery or purchased in the freezer case – is made like most pastries –with LOTS of wheat flour, sugar and margarine or butter.
In fact, a typical sticky bun has over 50 carbs and 30 grams of sugar per serving!

KETO PALEO STICKY BUNS: THE STEP-BY-STEP
You’ll find the printable recipe at the bottom of this post, but for now, let’s walk through it.
For this recipe, you’ll need a deep mixing bowl, a small mixing bowl, parchment paper, a silicone spatula, measuring cups, a hand mixer and two-8" cake pans or a 10" cake pan.
For the rolls, you'll need 1 Miracle Bread Mix, 3 pastured eggs, 1/4 cup sour cream, yogurt or coconut cream, 4 oz. cream cheese (or Kite Hill cream cheese), 1/4 cup water, 2 Tbsp. melted butter, 2 tsp. xanthan or glucomannan, 1 Tbsp. apple cider vinegar, and 2 tsp. active dry yeast (optional).
For the filling, you'll need 3 Tbsp. melted butter, 4 Tbsp. Keto Sweet and 3 Tbsp. cinnamon.
Finally, for the frosting, you'll need 4 oz. cream cheese (or Kite Hill cream cheese) , 4 Tbsp. butter, 1/4 cup Keto Sweet, 1 tsp. vanilla extract and 1 Tbsp. heavy cream.
Ok, let's make some cinnamon rolls!
Grease and line two 8'' pans or a 10" pan. Preheat oven to 375 F. In a small bowl, combine the filling ingredients. Set aside.
Add the eggs, sour cream, 4 oz. cream cheese, apple cider vinegar, water and melted butter to a large bowl. Mix with a hand mixer to combine.
Once you have your fully-rolled cinnamon "log", pinch the ends and slice into 6 equal cinnamon rolls.
Transfer the pan to the preheated oven and bake 25-30 minutes to golden. (NOTE: Covering the pan with a lid or foil will create a softer, moister cinnamon roll)
While the cinnamon rolls bake, make the glaze. Add the cream cheese, butter, Keto Sweet and vanilla to a Magic bullet or a small bowl.

Rolls
1 package Miracle Bread Mix
3 large pastured eggs (150 g)
2 Tbsp. butter, melted (28 g)
¼ cup organic yogurt, sour cream or coconut cream (60 g)
1 Tbsp. apple cider vinegar
¼ cup water
2 tsp. konjac fiber or xanthan gum
2 tsp. active dry yeast (optional)
4 oz. organic full fat cream cheese, room temperature (or Kite Hill cream cheese)
Filling
3 Tbsp. butter, melted
6 Tbsp. Keto Sweet
3 Tbsp. cinnamon
Caramel-Pecan Topping
4 Tbsp. butter
¼ cup Keto Sweet
½ cup heavy cream
6 oz. pecans, roughly chopped
Instructions
1. Prepare a 10" pan or two -8” pans by greasing and lining with parchment. Preheat oven to 375 F.
2. In a small bowl, combine the cinnamon and Keto Sweet for the filling. Set aside.
3. Make the caramel. In a small saucepan, melt the 4 Tbsp. butter over medium heat. Add the 6 Tbsp. Keto Sweet and heavy cream and simmer for 10 minutes, whisking occasionally.
4.Scatter the pecans in the bottom of the pan. Pour the caramel over. Set aside.
5.Make the rolls. In a medium bowl, add the eggs, sour cream, 4 oz. cream cheese, apple cider vinegar, water and 2 Tbsp. melted butter. Using a hand-held mixer, mix to combine thoroughly.
6.Pour in the Miracle Bread Mix, konjac or xanthan and yeast. Mix to combine. Let stand 1 minute.
7.Grease a sheet of parchment paper. Divide dough into two balls. Place one dough ball on the parchment and using oiled or wet hands, pat out to a 10 x 8 rectangle with the short end facing you.
8.Pour 1.5 Tbsp. melted butter over the dough, then sprinkle with half the cinnamon-sugar mixture.
9.Using the parchment as a guide, roll the dough up and pinch the ends. Using a sharp knife, cut the dough roll into 6 equal cinnamon rolls. Place the rolls in the prepared pan. Repeat the process with the remaining dough.
10. Cover the pan with foil and transfer to the preheated oven. Bake 25 minutes. Remove the cover and allow to bake another 5 minutes. For softer, tenderer rolls bake less; for more structured, bread-rolls, bake a bit more.
11. Let cool in the pan for a few minutes. Then invert the rolls onto a plate, remove parchment and serve.

Everything was loaded with inflammatory grains, fake fats and sugar…or even worse, artificial sweeteners. We knew there had to be a better – and MUCH healthier – way.
So, with our backgrounds in health research, nutritional biochemistry and recipe development, we set out to use grain-free flours, healthy, slimming fats and natural no-sugar sweeteners to match the taste, texture and flavor of our favorite comfort foods.
At the time, very few people had even heard the term “gluten free.” There were no products to taste for inspiration and no recipe books to follow. It was all trial… and LOTS of errors.
Eventually, however, the experiments paid off. We discovered a few secrets. And then we made small, incremental improvements… perfecting one delicious product at a time.
And while it certainly wasn’t easy…
