Yield: Eight 6” tortillas
¾ cup Miracle Mix
1 Tbsp. organic psyllium husk powder
1 Tbsp. organic golden flaxseed, ground
½ tsp. garlic powder (optional)
½ tsp. ground cumin (optional)
2 Tbsp. pastured pork lard or coconut oil
2 large egg whites
½ cup boiling water
1. Preheat a tortilla press or cast iron skillet over medium heat.
2. In a medium bowl, mix the dry ingredients.
3. Add the lard (or coconut oil) and mix with a fork or your hands to form a shaggy dough. Stir in the egg whites.
4. Pour in the boiling water. Stir quickly to incorporate. The dough will swell and become easy to work with.
5. Divide dough into 8 balls, roughly one ounce each.
6. Place dough onto wax or parchment paper and flatten to a circle 6” in diameter.
7. Put flattened dough onto preheated press or skillet. Cook 2 minutes to golden brown. Flip to cook other side.
