¼ cup heavy whipping cream (or full fat coconut milk for dairy free alternative)
½ cup Keto Sweet
3 Tbsp. butter (or palm shortening for dairy free)
3 oz. sugar-free dark chocolate chips
1. Line a baking sheet with unbleached parchment paper. Arrange pecans in clusters of 3 and set aside.
2. To prepare caramel add butter to a small saucepan on high. Once boiling, watch carefully for the butter to brown.
3. Turn heat down and add Keto Sweet and cream. Whisk until mixture thickens. Turn heat off and set aside to cool.
4. Meanwhile, add one inch of water to a double boiler or small saucepan with a stainless steel bowl on top.
5. As the water comes to a boil, drizzle about 1 tablespoon of caramel over each pecan cluster. Place clusters in refrigerator to set.
6. Add chopped dark chocolate to the double boiler. Stir until melted.
7. Spoon melted chocolate over caramel-covered pecans. Return to the refrigerator to set.
