We call erythritol “The Almost Sugar” because it has properties very similar to sugar… without the calories or glycemic impact. And we’re not the only ones who feel this way.
Here’s what Nora Simmons, Managing Editor of the Nutrition Business Journal, wrote when she first tried erythritol:
“It bakes, dissolves, browns, even candies like sugar. I had pecan pralines made with this stuff and they were just as crunchy, candied and decadent as any my friends from Louisiana have ever made for me. But these won’t spike my blood sugar or give me cavities! And there’s no bitter aftertaste. You can’t even tell this isn’t sugar.”

Erythritol is a natural “sugar alcohol.” Part of its molecular structure is like sugar and part is like alcohol. And even if you’ve never heard of erythritol… you’ve definitely consumed it!
Erythritol occurs naturally in many foods, including pears, grapes, mushrooms and melons. It’s also found in fermented products like wine,beer and sake. It’s estimated the average person consumes about 100 mg of naturally-occurring erythritol daily.
But that’s not all…
Scientists have found erythritol in human tissue and fluids and discovered it is produced within your body. In other words, erythritol is already “recognized” by your body as a natural compound.
As a sweetener, erythritol is made from raw materials that are naturally rich in sugar, including beets, birch, fruit, corn, sugarcane and more. Enzymes are used to turn the starches in these materials into glucose. And the glucose is then converted to erythritol by fermentation. [2]
Given its natural origin and production methods, it’s no surprise studies show erythritol is safe and well-tolerated, even at high levels of consumption.[3,4] It is approved by the FDA as GRAS (generally regarded as safe) and has a spotless safety record – including 30+ years as a natural sweetener in Japan.
It is no surprise this natural sweetener has become so popular!
The “tastes-like-sugar” sweetness of erythritol is what propelled Bai Antioxidant Infusion drinks and Halo Top Ice Cream from kitchen-table startups to billion-dollar consumer brands in just a few years.
In fact, at one point in 2017, Halo Top was the #1 selling pint of ice cream in the United States – beating out sugar-sweetened ice creams that have been on the freezer shelf for 50 years!
Now, let’s discuss the proven properties that make erythritol a healthy choice…
When it comes to the harmful properties of sugar, its effect on your metabolism gets all the attention. But that’s not the only way sugar harms your health…
It is also a potent stimulator of free radicals – rogue molecules which make themselves whole by “stealing” electrons from healthy tissues. This can cause a chain reaction of damage, known as oxidative stress.
In a Japanese study, researchers discovered that glucose caused free radicals to increase by 568%. Yet, that’s nothing compared to fructose,which caused these “radical robbers” to soar 47 times higher than baseline![5]
This alone should encourage you to reduce your sugar consumption!
But there is good news if you enjoy sweets… AND you value your health.
Multiple studies, including research published in the journal Nutrition, demonstrate that erythritol is a powerful scavenger of free radicals. Specifically, it’s been shown to help to protect endothelial cells that line your blood vessels and form other critical membranes.[6, 7]
Now, let’s discuss one of the most common concerns people have about sugar alcohols – digestive distress – and why erythritol is superior in this regard as well.
If you’re familiar with sugar alcohols (or polyols) –including xylitol, mannitol, maltitol, sorbitol and others – there is a good chance you’ve heard about their unwanted digestive effects.
And (in some cases) it’s true…
While these sweeteners are quite safe to consume, they are sometimes accompanied by bloating, gas, abdominal discomfort and laxative effects. That’s not a trade off we’re willing to accept!
Thankfully, these uncomfortable “symptoms” do not apply to erythritol.
Numerous studies show erythritol has very high digestive tolerance. It causes no gastrointestinal issues for most people, even when consumed in amounts far exceeding those used for sweetening and baking.[8,9]
It is important to note, however, that we are all biologically unique. And while the vast majority of people can consume erythritol without the slightest gurgle, a very small number of people do report digestive discomfort. As always, go with your gut!
There’s an important scientific reason why this super sweetener is so well tolerated…
In chemistry, the structure and function of molecules are inextricably linked.
In other words, two molecules can have the exact same atoms,but the way those atoms are structured and chained together can result in VERY different substances and behaviors.
When it comes to sugar alcohols – and their risk for digestive upset – the two critical factors are molecular weight (mass) and the number of hydroxyl groups (hydrogen and oxygen bound together). Polyols with greater mass and more hydroxyl groups have a higher risk of causing digestive issues.
And among the polyols commonly used for sweetening, the one with the lowest molecular weight and fewest hydroxyl groups is… erythritol.
In an article for health professionals, published in the International Journal of Dentistry, researchers reviewed the effect of sugar alcohols on the digestive system, stating that:
“Sugar alcohols behave in the gut […] in different ways and their effects are not identical. Sugar alcohol molecules react in the gut […] based on their molecular mass, number of hydroxyl groups, the spatial orientation of those groups, and the overall symmetry of the molecule.”
The article goes on to state that – due to its lower mass and simpler configuration – erythritol “avoids the gastrointestinal reactions encountered with other polyols [and] does not normally lead to any gastrointestinal changes.”[10]
And did you know that SUGAR – including so-called healthy“fruit sugar” – can also cause serious digestive distress?
Even among healthy people, 80% of fructose is poorly absorbed in the digestive tract. As it lingers in the gut, it can cause gas,acid reflux, diarrhea, and more. In fact, fructose malabsorption affects up to 50% of the population![11, 12]
It can also be a sign of more serious conditions, like small intestine bacterial overgrowth (SIBO) or irritable bowel syndrome(IBS), which affects 50 million Americans. Studies show 85% of people with IBS could significantly reduce their symptoms by simply avoiding fructose![13]
And these are not the only reasons why erythritol is our gut-friendly sweetener of choice…
You might have heard that sugar alcohols are FODMAPs – whichstands for Fermentable Oligo-, Di-, Monosaccharides and Polyols. The key word in that acronym is “fermentable.” This is why these foods can cause gas and bloating for some people (particularly those with an imbalance of bad bacteria in the gut).
However, there is ONE polyol that does NOT ferment in the gut… erythritol.
As a result of its simple molecular structure, 90% of consumed erythritol is absorbed in the bloodstream and then excreted (unchanged) in the urine. Only about 10% enters colon, where fermentation normally occurs.
So, what happens to the small amount that makes it to the colon?
Research published in the British Journal of Nutrition evaluated the fermentation potential of erythritol in the colon, stating that it is “completely resistant to bacterial attack”. The researchers also found that no gas or short chain fatty acids (SCFAs) were produced.[14]
The erythritol was recovered – unchanged and unfermented – after traversing the colon.
What comes out of your digestive tract is typically very different than what went in.
As the foods you eat are broken down by enzymes, acids and bacteria,a wide variety of health-promoting (and sometimes health-harming) byproducts are produced.
But in the case of erythritol, it leaves your body in the same form as it entered.
It is precisely the lack of metabolism or fermentation that makes erythritol so well-tolerated.
A study published in the European Journal of Nutrition evaluated the maximum tolerable dose of various sugar alcohols. The scientists discovered subjects could consume 167% more erythritol (up to 35 grams) without any observable digestive or laxative effects.[15]
Another European study also demonstrated zero digestive effects – this time, up to 80 grams (almost three ounces) of erythritol consumed in a day![16]

From the age of five, you were probably taught that “Sugar rots your teeth”.
And it’s true… through the process of fermentation, bacteria in your mouth convert sugars into acidic byproducts, which can demineralize the teeth.
Fortunately, some natural sweeteners resist this process. There’s a good chance you’ve seen one of them – the sugar alcohol, xylitol – in your favorite natural gums, mints, mouthwash and toothpaste.
Xylitol is used in these products for its oral health benefits.
But it’s not the only tooth-friendly sweetener. Erythritol also promotes dental health. [17,18]
In fact, research published in the International Journal of Dentistry found that when it comes to keeping your teeth and gums healthy, erythritol has greater efficacy than xylitol![19]
They go on to call erythritol, “The Sweetener of the Next Generation.”
There are also studies in at least three dental and oral microbiology journals, reporting that erythritol improves the oral microbiome and helps beneficial bacteria flourish while keeping bad bugs at bay.[20, 21, 22]
Finally, let's take a look at the impact of erythritol on blood sugar metabolism...
Decades of anecdotal evidence demonstrate that that erythritol is safe and effective for those who wish to maintain healthy blood-sugar metabolism. Numerous studies also show that it causes no detectable changes in blood sugar or insulin levels, directly following consumption.[23, 24]
In 1996, a study was published in Regulatory Toxicology and Pharmacology, where a 20-gram solution of erythritol was administered to diabetic subjects. Erythritol levels peaked after one hour and then rapidly declined, while glucose and insulin levels remained unchanged.
Interestingly, the researchers discovered that as the 14-day trial progressed, the participants’ average blood-sugar readings declined – indicating that erythritol may benefit long-term glucose control.[25]
Other studies have repeated these results, showing that consuming erythritol at mealtime (Dessert, anyone?) actually helps to control insulin between meals. And given these results, it’s no surprise erythritol has been shown to improve HbA1c levels (an important measure of metabolic health).[26]
Now that you've discovered the many benefits of erythritol, you should also know there is…
Erythritol tastes like sugar and bakes like sugar.

So, with our backgrounds in health research, nutritional biochemistry and recipe development, we set out to use grain-free flours, healthy, slimming fats and natural no-sugar sweeteners to match the taste, texture and flavor of our favorite comfort foods.
At the time, very few people had even heard the term “gluten free.” There were no products to taste for inspiration and no recipe books to follow. It was all trial… and LOTS of errors.
