If you’ve heard of psyllium husk before, it is probably related to its ability to (ahem!) “cleanse” the system and promote digestive regularity.
But the main reason we use psyllium in our products here at Wellness Bakeries is for its remarkable properties in baking and its ability to help gluten-free breads rise and taste like the “real deal.”

For many people with digestive issues, fiber is a touchy subject. And the reason?
Fermentation.
You see, our gut is home to trillions of microbes including bacteria, fungi and other microorganisms. These microbes have a myriad of activities and produce many different substances, depending on the type of bacteria they are… and what you feed them!
While friendly bacteria are the “peace keepers” - making your belly feel comfortable and quiet while producing substances that boost health – unfriendly bacteria can be the cause of gas, bloating, and discomfort (not to mention constipation, diarrhea and more serious issues).
In both cases, when bacteria are fed a “substrate” (fiber or other carbohydrates), they transform it into new compounds through the process of fermentation. For example, when healthy bacteria eat certain types of fiber, they produce a gut-healing, cell-protecting,antioxidant substance called butyrate.
Fermentation can be very beneficial and health-promoting. However, for many of us with compromised guts and an imbalance of bad bacteria (up to 70% of thepopulation!), fermentation can mean discomfort… and even disease.
In fact, when certain unhealthy varieties of bacteria are fed they produce lipopolysaccharides (LPS)– toxic compounds that promote leaky gut, autoimmunity, mood imbalances, “brainfog”, and much, much more.
Psyllium is a special kind of viscous fiber. Viscous fibers attract a lot of water and form a slippery gel, known as mucilage. This is what makes psyllium so helpful to “keep things moving”. Oddly enough, it’s also why psyllium helps to normalize a too-loose bowel.
Recent research published in Proceedings of the Nutrition Society found that viscous fibers like psyllium are resistant to digestion and poorly fermentable.
So while psyllium can certainly help you to be more “regular”, it won’t encourage the rapid growth of bacteria – good or bad – in your microbiome that other forms of fiber can.
The result: Psyllium doesn’t cause the bloating, cramps or discomfort that many other fibers do.
Now that you’ve discovered how psyllium forms a unique gel,it probably won’t come as a surprise to learn that this gel has a unique ability to bind up substances – like cholesterol and glucose – in your bloodstream.
In fact, a metabolic ward study published in The American Journal of Clinical Nutrition found that diabetic men given 5 grams of psyllium daily for 8 weeks experienced the following benefits:
These are pretty impressive benefits, especially considering the small amount of psyllium given, and that the study was conducted in metabolically- compromised individuals.
While there’s no direct evidence that reducing cholesterol reduces heart disease risk, we know that getting our blood sugar stabilized and in a healthy range is absolutely vital for our health and longevity.
In fact, we now know that blood sugar and longevity are inversely correlated.
A meta-analysis published in The Annals of Internal Medicine looked at HbA1c – which measures your average blood sugar levels over the past three months. Not surprisingly, the researchers found that every 1% increase in HbA1c ups the risk of death – from all causes – by 24% for men and 28% for women.
It has been said that “Wellness is not the absence of disease, it is the presence of health.” We now know that without healthy blood sugar control, you can’t be truly “well”.

As you just learned, viscous fibers - like psyllium - are thick, gluey and gelatinous. In other words,this unique fiber shares a number of physical properties with gluten!
In fact, psyllium can help provide the same spongy structure and stretchy texture that you’ve come to know and love about breads that contain gluten.
Without psyllium, grain-free breads and baked goods can turnout flat, crumbly and dense. But as psyllium bakes, it expands and creates a strong fiber network. Wellness Bakeries was founded in 2006, with the mission to create the world’s healthiest and best-tasting gluten-free, carb-conscious, baking mixes.
Our goal was to make it easy for you to enjoy decadent desserts, chewy breads, crusty pizza, fluffy pancakes, crispy waffles and other sweet treats – that would not sour your health!
When we started this journey, there were no options for truly healthy baking mixes.
Everything was loaded with inflammatory grains, fake fats and sugar…or even worse, artificial sweeteners. We knew there had to be a better – and MUCH healthier – way.
So, with our backgrounds in health research, nutritional biochemistry and recipe development, we set out to use grain-free flours, healthy, slimming fats and natural no-sugar sweeteners to match the taste, texture and flavor of our favorite comfort foods.
At the time, very few people had even heard the term “gluten free.” There were no products to taste for inspiration and no recipe books to follow. It was all trial… and LOTS of errors.
Eventually, however, the experiments paid off. We discovered a few secrets. And then we made small, incremental improvements… perfecting one delicious product at a time.
And while it certainly wasn’t easy…
