In efforts to create billowing loaves and old-world taste and texture in our grain-free breads and pastries, we turn to an ancient ingredient: Yeast.
If you’ve ever baked traditionally – using grains and gluten– you already know how yeast works magic transforming otherwise flat breads into towering loaves, peppered with air pockets and a tender crumb.
But how can yeast improve breads and pastries made without grains, gluten or excess carbs?
In this article, you’ll learn:
Yeast is a single-celled organism that works by consuming sugar and excreting carbon dioxide and alcohol as byproducts.
Carbon dioxide, as you might already know, is a gas. As yeast excretes carbon dioxide, it makes tiny pockets of air that lift dough,creating beautiful rise. If the dough has a strong and elastic network (either from gluten, or the “gluten-mimics” we use here at Wellness Bakeries), the carbon dioxide is held within the bubble and will begin to inflate it, just like someone blowing up bubblegum.
As more and more tiny air cells fill with carbon dioxide, the dough rises and we’re on the way to leavened bread.
But yeast doesn’t just help breads to reach new heights. That same fermentation also contributes to incredible flavors in bread.
You see, the large molecules in proteins, starches, and fats don’t have much flavor.
But when they break down into their building blocks—proteins into amino acids, starches into sugars, or fats into free fatty acids—they all have marvelous layered flavors that give depth and richness to baked goods.
Fermentation, whether it’s acting on fruit juices to make wine or on flour to make bread, does exactly that—it breaks down large molecules into smaller, more flavorful ones.
In addition to adding flavor, the acids and carbon dioxide in the dough also make it more acidic, which causes even more chains of molecules to break into smaller ones.
This creates flavor because when molecules in protein, starches, and fats are broken down into their building blocks they become more complex… and delicious.
You may have seen commercial “dough enhancers” that claim to make taller loaves with better texture and longer shelf life.
Here, we deconstruct three Keto and Paleo-friendly components of dough enhancers… and how you can use them to help your breads reach their fullest potential.
Because yeast is a living organism, it takes some know-how to release its full potential (and not kill it before it can work its magic!). Here are three important factors to ensure your yeast will do its intended job:
Live and Viable: Sometimes, yeast can be "dead on arrival" - its simply gone bad before you use it. Yeast should smell earthy and “yeasty.” If it doesn’t, do a quick test “proof” by adding a bit to warm water with sugar source (maple syrup,honey, coconut sugar). If the yeast is active, it will produce a bubbly foam within 10 minutes. (See photo at left of proofed yeast)
Water Temperature: Yeast becomes active within a narrow temperature range. Too hot and you’ll kill it; too cold and it won’t bloom. Your water should be between 105 F – 115 F (41-46 C). If pre-rising your baked goods, the ambient temperature should be between 80-90 F.
Salinity: Yeast also does best with the right amount of salinity. Adding salt before the yeast has bloomed can reduce hydration,starving it of the water it needs to survive.
Now, let’s talk about how we can feed yeast properly.
The Care & Feeding of Yeast
Because our mixes are very low in carbohydrates, there is virtually nothing for the yeast to consume. And without a food source, yeast can’t work its fermentation transformation.
That is why we call for a small amount of honey or maple syrup.
But wait a second, you ask…
How are these breads “keto” if they contain sugar?!
First, it’s important to understand only a teaspoon or two of these ingredients are used in these particular recipes. We include just enough fermentable substrate for the yeast. As the yeast transforms the energy in the carbohydrates, the mixture begins to foam. This is evidence that the sugars are being consumed by the yeast – so they won’t be consumed by your body.
Once the mixture has “bloomed”, the small amount of sugar is almost entirely consumed and very little remains in the final product. The end result is a bread or pastry that is still VERY low in carbohydrates and fully compliant with the ketogenic macronutrient ratio.
However, please keep in mind that the “Yeast Preparation” is optional. If you avoid yeast or if you do not wish to add any sugars to your bread (even if they are transformed before you consume them) you can simply leave these ingredients out of the recipe and skip the steps that involve the yeast mixture.
You can also swap the honey or maple syrup for a pre-biotic fiber, like inulin. This provides the yeast a source of carbohydrate to consume, without using a form of sugar.
Like everything in life, managing your expectations is very important...
If you've been baking with grains and yeast, please note: You will NOT get the same level of rise in your Paleo & Keto breads that you do in traditional wheat-based breads.
But, you will get some rise, as well as all of the delicious old-world flavor that yeast-based baking produces.

But for those of you who are sensitive to yeast – you should know the yeast preparation in these recipes is totally optional. If you don’t want to use yeast, simply omit the yeast and its “food” and use the water called for in the recipe.
