Eggs are a nearly-perfect superfood… unless you have an egg allergy or intolerance!
And it seems that this dietary dilemma becomes more common with each passing year – as growing numbers of people discover they feel better without eggs in their diet. Of course, many of these people still want to enjoy the pleasures of bread!
So, we set out to discover the best way to prepare our one-of-a-kind Miracle Bread without the use of eggs. Before we begin, it is important to note that eggs are one of the most difficult things to replace in baking. That’s because eggs provide a number of important properties.
Eggs create a matrix within bread that improves binding and helps to hold the ingredients together. The protein in eggs also provides structure and stability that helps bread to stand tall. The properties of eggs also help to trap and hold air, which improves leavening and increases rise.
It is difficult to replace all these different properties with just one ingredient substitution. And we certainly tried, performing more than a dozen experiments with various commercial egg replacement products and “at-home” recipes.
Most of these formulas are designed to work with traditional wheat breads. They do not perform the same with grain-free ingredients and did not meet our expectations. The results are typically “gummy” and many of these substitutions added too many carbs for our comfort level.
But we are not easily deterred. And after numerous trials, we finally found an egg-free combination of ingredients that WORKS!
The image at the top of this page is made using the egg-free recipe featured below, so you know what to expect. This egg-free version of Miracle holds together well and is easy to slice. And while it doesn’t rise to the same degree as the version with eggs, it does increase in height as it bakes.
In addition to one package of Wellness Bakeries Miracle Bread Mix, this preparation calls for a few common kitchen staples that are not listed on the package directions. Here's how these functional ingredients work to replace eggs:

Ingredients
1 Miracle Bread Mix
4 Tbsp. oil or grass-fed butter, melted
4 Tbsp. sour cream, yogurt or coconut cream
1 scoop (20 g) plain, unflavored whey protein powder
1 Tbsp. psyllium husk powder (must be fine powder, not whole husk
1 Tbsp. organic apple cider vinegar
1 tsp. active dry yeast (optional)
1 cup sparkling or carbonated water
Instructions
1. Preheat oven to 375°F. For loaf, grease loaf pan then line with parchment paper. For rolls, grease or line a muffin tin.
2. In a mixing bowl, add sour cream, vinegar, carbonated water and melted butter or oil. Beat or whisk to combine.
3. Add Miracle Bread Mix, psyllium, yeast (if using). Beat until combined.
4. If using yeast, cover bread with a kitchen towel and allow bread to rise in a warm spot for 45 minutes.
5. Scrape batter into loaf pan or divide batter evenly among the wells of the muffin tin.
6. For loaf, bake 40-45 minutes or until a thermometer inserted into the center reads 200 F. To prevent over-browning, cover loosely with aluminum foil in the last 15 minutes.
7. For rolls, bake 20-25 minutes or until a thermometer inserted into the center reads 200 F.
8. Allow bread to cool completely before slicing (Important, to achieve desired texture).
